I ran it over this morning and the only salvageable cut is the saddle. Usually I roast them whole and the kids love them.

Let me tell you what, you can put that critter in a pot of boiling water with some cut up onion, some carrots, maybe a potato or two, and a sprinking of Gramma's butt crust and have yourself some good ol' fashioned Wascally Wabbit Surprise. Bar-B-Q'd Raccoon
~ raccoon, cut into serving pieces
~ 1 cup red wine
~ 2 onions, sliced
~ 3 bay leaves
~ 1 tbsp salt
~ 1 tsp pepper
~ 3 cloves garlic, sliced
~ 2 cups of your favorite barbecue sauce
~ 1 tbsp paprika
Place the raccoon pieces in a large pan. Add the wine, onions, bay leaves, salt, pepper and garlic. Add enough water to cover the meat.
Bring to a boil. Cover and simmer for 1 hour.
BBQ it on a rotisserie. Braise it with a honey-mustard sauce. Serve it with collared greens and a deep cabernet. A sweet onion sauce would also be a nice compliment.
