I think the secret would be in marinating your raccoon properly. That way the meat will just fall off the bones and be so tender it will be mouthwatering. You can find recipes like this below. Here is one.





Title: Roadkill Chili


Yield: 8





Ingredients





1 lg onion; chopped


2 tb oil


2 lb raccoon; chili-grind


28 oz canned tomatoes; undrained


1 ts sugar


2 ts ground cumin


2 ts paprika


1 lg garlic clove; minced


1 bottle beer


2 fresh jalapenos; seed %26amp;


-chopped fine


5 tb chill powder


1 salt and cayenne; to taste


4 tb instant corn masa; for


-thickening


1 tb tequila





Instructions





In a medium pot, over medium-high heat, saute onion in oil. Chop ground meat into bite-size pieces, removing all fat and gristle. Add to onions and stir until browned. Add tomatoes, sugar, cumin, paprika, garlic, beer, jalapenos, chili powder, salt and cayenne pepper to taste. Cook uncovered, over medium-low heat until thick, about 1 1/2 hours. This is


best done in a bar-be-que pit over mesquite coals with the lid closed. Thicken with Masa, if needed. When ready to serve, put into a large bowl. Pour Tequila over it and carefully light.

How to de-bone a raccoon:





Insert raccoon into boiling cauldron.





Boil until excess fur starts floating to the surface of the boiling water. Skim off fur gloop with spoon.





Take raccoon out of boiling water. Slit skin lengthwise. Re-insert into boiling water.





Skin will separate and float to the top in about 5 minutes.





Remove fur. Put aside for later to make a raccoon hat.





Simmer for 30 minutes.





Remove from cauldron. Grasp spine at the neck area and pull hard. With a little practice, the spine and ribs will come off with one swift pull.





Place remains on greased baking pan. Bake in oven at 450 degrees until brown.





Remove organs with a skewer. Slice up remains into 4'; chunks. Pour 1/2 pint of extra virgin olive oil into skillet. Place 4'; chunks into skillet. Fry and season to taste.





Serves 6.
